Saponification is the process used for the manufacture of soaps.
Soaps are made from naturally occurring animal fats and vegetable oils. Animal fats and vegetable oils are esters of alcohols, propane-1,2,3-triol (glycerol) CH2OHCH2OHCH2OH, and long-chain carboxylic acids (often called fatty acids) RCO2H, with alkyl groups from 7 to 21 carbon atoms. This process is known as saponification and the sodium salt of the acid is soap.
